Instead of entering the Gross Weight, enter the Zero Fuel Weight. Empty Weight + Payload.

The 767 has a maximum GW and the CDU will not accept a number that is greater than that. Strangely enough, if the ZFW + Fuel weight exceeds the GW, it will happily accept it. You just can't enter it yourself.
